Nutrition
Excellent source of vitamins C and K. Rich in fiber, folate, and antioxidants. Contains some protein.
A note from the editors
Roasting brings out natural sweetness and reduces bitterness. Cut an X in the bottom for even cooking.
Good to know
Cook until completely soft to reduce choking risk. May cause gas in some babies. Cut in half lengthwise for safety.
