Ingredients

  • 200g cooked salmon, flaked
  • 3 medium potatoes, cubed
  • 3 tbsp cream cheese
  • 1/2 cup frozen peas, thawed
  • 1/2 cup milk
  • 1 tbsp butter

Method

  1. 01

    Peel and cube 3 medium potatoes. Boil in unsalted water for 15 minutes until very soft. Mash with 1 tbsp butter and a splash of milk until perfectly smooth.

    Flake 200g cooked salmon into bite-sized pieces, checking very carefully for any bones.

    In a saucepan, combine 3 tbsp cream cheese with 1/2 cup milk over low heat, stirring until smooth. Add 1/2 cup thawed peas and the flaked salmon.

    Transfer the salmon mixture to a small baking dish. Spread the mashed potato evenly over the top.

    Bake at 375°F (190°C) for 20 minutes until the top is lightly golden. Allow to cool before serving.
