Ingredients

  • 1 slice whole-grain bread
  • 1/2 ripe avocado
  • 2 tablespoons black beans (canned, rinsed, drained)
  • 1/4 lemon (juice only)

Method

    Toast a slice of whole-grain bread until just golden and slightly soft (not hard/crunchy).

    Halve and pit a ripe avocado. Mash the flesh with a fork until smooth.

    Drain and rinse black beans. Add to the avocado and mash together, leaving some texture.

    Stir in a tiny squeeze of lemon juice and mix well.

    Spread generously over toast and cut into finger-width strips before serving.
