Ingredients

  • 1 cup sweet potato, cooked and mashed
  • 2 eggs
  • 1/4 cup unsweetened cacao powder
  • 1/2 cup rolled oats (blended to flour)
  • 2 tbsp olive oil
  • 1 tsp vanilla extract
  • 1 ripe banana, mashed

Method

    Preheat oven to 350°F (175°C) and line a square 8x8 inch baking pan with parchment paper.

    Steam or roast 1 cup of sweet potato until very soft, then mash until completely smooth with no lumps.

    In a large bowl, combine the mashed sweet potato with 2 eggs, 1/4 cup unsweetened cacao powder, 1/2 cup rolled oats (blended into flour), 2 tbsp olive oil, and 1 tsp vanilla extract. Mix until a thick, smooth batter forms.

    Pour the batter into the prepared pan and spread evenly with a spatula.

    Bake for 22–25 minutes until set in the center and a toothpick comes out mostly clean. Cool completely before cutting into small squares — they will firm up as they cool.
