Ingredients

  • 4 eggs
  • 1/2 medium zucchini, diced small
  • 1/2 bell pepper, diced small
  • 3 tbsp cheddar cheese, shredded
  • 1 tbsp olive oil
  • 2 tbsp milk or water

Method

    Preheat the oven broiler/grill to medium. Dice 1/2 zucchini and 1/2 bell pepper into very small pieces.

    Heat 1 tbsp olive oil in a small oven-safe pan over medium heat. Cook the zucchini and bell pepper for 4–5 minutes until softened.

    Whisk 4 eggs with 2 tbsp milk or water and pour over the vegetables. Sprinkle 3 tbsp shredded cheddar cheese on top.

    Cook on the stovetop undisturbed for 3–4 minutes until the edges are set and the bottom is lightly golden.

    Transfer the pan to the broiler and cook for 3–4 minutes until the top is set and the cheese is melted and golden. Cool before cutting into small squares.

How to offer

Cut into small squares for self-feeding at 12 months. Frittata squares are easy to pick up and pack lots of nutrition. Excellent warm or at room temperature for outings.

Storage

Refrigerate in an airtight container for up to 3 days. Eat cold or warm gently.
