Ingredients

  • 3 ripe bananas, mashed
  • 2 eggs
  • 1 cup whole wheat flour
  • 1/2 cup rolled oats
  • 3/4 cup blueberries (fresh or frozen)
  • 2 tbsp butter or olive oil
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 1 tsp vanilla extract

Method

  1. 01

Preheat oven to 350°F (175°C) and grease a small loaf pan (8x4 inch) and line with parchment paper.

  2. 02

In a large bowl, mash 3 very ripe bananas until smooth. Add 2 eggs, 2 tbsp melted butter or olive oil, and 1 tsp vanilla extract. Whisk to combine.

  3. 03

Add 1 cup whole wheat flour, 1/2 cup rolled oats, 1 tsp baking powder, and 1/2 tsp cinnamon. Stir gently until just combined — do not overmix.

  4. 04

Gently fold in 3/4 cup of fresh or frozen blueberries, then pour batter into the prepared loaf pan.

  5. 05

Bake for 38–42 minutes until a toothpick inserted in the center comes out clean. Cool in the pan for 15 minutes, then transfer to a wire rack to cool completely before slicing.
