  • 1 tbsp olive oil
  • 1/4 tsp ground cumin
  • 1/4 tsp turmeric

Method

  1. 01

Rinse 1/2 cup red lentils under cold water until the water runs clear. Peel and dice 1 medium carrot into small cubes.

Heat 1 tbsp olive oil in a pot over medium heat. Add 1/4 tsp ground cumin and 1/4 tsp turmeric, stirring for 30 seconds until fragrant.

  3. 03

Add the rinsed lentils and diced carrot to the pot. Pour in 1 cup coconut milk and 1 cup water. Stir to combine.

  4. 04

Bring to a boil, then reduce to a simmer and cook uncovered for 20–25 minutes, stirring occasionally, until lentils are completely soft and broken down.

  5. 05

Remove from heat and mash or blend to a smooth or slightly chunky consistency depending on baby's developmental stage. Serve warm.
