Ingredients

  • 1 cup pitted Medjool dates
  • 2 cups rolled oats
  • 3 tbsp coconut oil, melted
  • 1 tsp vanilla extract
  • 1 tsp cinnamon

Method

    Preheat oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper.

    Soak 1 cup of pitted Medjool dates in warm water for 10 minutes, then drain and blend into a smooth paste.

    In a bowl, combine the date paste with 2 cups rolled oats, 3 tbsp melted coconut oil, 1 tsp vanilla extract, and 1 tsp cinnamon. Mix until a sticky, uniform dough forms.

    Press the mixture firmly and evenly into the prepared pan.

    Bake for 18–20 minutes until firm and golden on top. Allow to cool completely in the pan — the bars firm up as they cool. Slice into small fingers before serving.

How to offer

Cut into small soft finger strips. Suitable for babies 12 months and up. The natural sweetness from dates is a great alternative to added sugar. Supervise as dates can be sticky.

Storage

Store in an airtight container at room temperature for 3 days, or refrigerate for up to 1 week. Freeze for up to 2 months.
