Ingredients

  • 1/2 cup frozen peas
  • 1 egg
  • 3 tablespoons plain flour
  • 1 tablespoon fresh mint (finely chopped)
  • 1 teaspoon olive oil

Method

    Cook frozen peas in boiling water for 3 minutes, drain, and cool slightly.

    Mash peas roughly with a fork — leave some texture. Add egg, flour, and finely chopped fresh mint.

    Mix well to form a thick batter. If too wet, add a little more flour.

  4. 04

    Heat olive oil in a non-stick pan over medium-low heat. Drop spoonfuls of batter and flatten into small rounds.

    Cook 3–4 minutes per side until golden and cooked through. Drain on paper towel and cool completely.

How to offer

Place 2–3 fritters on the high chair tray. Always supervise during feeding. At 9 months, these round fritters are easy to pick up. Cut in half if needed for pincer grasp practice. Mint adds a novel flavour to expand baby's palate.

Storage

Refrigerate in an airtight container up to 3 days. Freeze for up to 1 month. Reheat in oven at 160°C.
